For the Salad:
· 2 large heirloom tomatoes, sliced
· 1 cup Russian watermelon, cubed
· 1 cup banana cantaloupe, cubed
· 1 ball of burrata cheese
· Fresh basil leaves, torn, for garnish
For the Sherry Vinaigrette:
· 1/4 cup extra virgin olive oil
· 2 tablespoons sherry vinegar
· 1 teaspoon Dijon mustard
· 1 teaspoon honey
· Salt and pepper to taste
Instructions
1. Prepare the Salad Ingredients:
1. Slice the heirloom tomatoes into thick slices and arrange them on a serving platter.
2. Cube the Russian watermelon and banana cantaloupe, and scatter them over the tomatoes on the platter.
3. Tear the burrata cheese into bite-sized pieces and distribute them evenly over the salad.
2. Make the Sherry Vinaigrette:
1. In a small bowl, whisk together the extra virgin olive oil, sherry vinegar, Dijon mustard, honey, salt, and pepper until well combined. Adjust the seasoning to taste.
3. Dress the Salad:
