Best Dairy-free Chocolate Cake

Adopted from noracooks.com, this chocolate cake is rich, and soooo yummy... and all without dairy or eggs.

Ingredients

  • 1 cup unsweetened soy milk (or almond if its all you have- it's just 1 almond takes 1 gallon of water to grow)d
  • 1 tablespoon apple cider vinegar or lemon juice
  • 2 cups all purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup canola oil or neutral sunflower oil
  • 2/3 cup unsweetened applesauce
  • 1 tablespoon pure vanilla extract
  • 1 cup boiling water

Frosting

  • 1 cup cocoa powder
  • 1 1/2 cups vegan butter (I use Earth Balance plant butter organic)
  • 4-5 cups powdered sugar
  • 2 teaspoons pure vanilla extract
  • 1/4-1/2 cup unsweetened soy milk or almond

Instructions

Chocolate Cake

The biggest challenge with this cake is not to spend more time cleaning up than you did making the cake! (from chocolate powder, powdered sugar, etc fly all over the place!) So I suggest you whisk everything by hand before attempting to use a stand or even hand held mixer!

1 Preheat oven to 350 ; and grease two 8 or 9-inch cake pans. Lining with parchment paper will help with removal.

2 Measure 1 cup plant milk;  add 1 Tbsp of vinegar or lemon juice to make "buttermilk"

3 In a large bowl, add the flour, sugar, cocoa powder, baking powder, baking soda and salt. Whisk by hand well to combine.

4 Now add the oil, applesauce, vanilla and milk/vinegar mixture. MIX BY HAND TO INCORPORATE, then mix on low, then medium speed until well combined.

5 Stop the mixer, and carefully pour in by hand and mix by hand the boiling water, gradually, and once combined, continue in a mixer  until combined. This makes a very thin batter.

6 Divide the batter evenly between your cake pans. Bake for 30-35 minutes until toothpick test is clear. Cool in pan for 10 min, then remove the cakes from the pans and let cool completely before frosting.

Chocolate Buttercream Frosting

1 Add the cocoa powder to a large bowl. Whisk to remove any clumps.

2 Add the softened vegan butter and mix by hand until creamed enough that you can now put in a mixer. until well combined.

3 Add half of the powdered sugar and half of the milk, and mix by hand until combined. Add the rest of the powdered sugar and vanilla extract by hand. Then mix starting on low, and turn to high until fluffy and combined.

Add more milk or sugar depending on consistency.
